  • Potatoes 3
  • Leaves of leeks 10
  • Mustard oil 1/4 cup
  • Red chillies 3
  • For Seasoning:
  • Panch foron (mustard, onion seeds, 1 tsp fenugreek, aniseed and cumin seeds, mixed in equal proportion)
  • Grind Together:
  • Turmeric powder 1/2 tsp
  • Cumin seeds 1/2 tsp
  • Coriander seeds 1 tsp
  • Ginger 1" piece

Cooking Directions

  1. Cut potatoes as for finger chips and chop the leaves of leeks roughly into small pieces.

  2. In a pan heat a little mustard oil.

  3. Add panch foron and a few torn red chillies.

  4. Add potatoes and very lightly brown them.

  5. Add the leek leaves and salt and mix well.

  6. Put all the ground ingredients and mix well.

  7. Cover the pan. Cook till done, adding water only if necessary.

  8. Serve hot with puris.
