INGREDIENTS

  • 1 16-ounce loaf of Italian bread or French bread
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large cloves of garlic, smashed and minced
  • 1 heaping tablespoon of freshly chopped parsley
  • 1/4 cup freshly grated Parmesan cheese (optional)

METHOD

Method 1 - Toasted

1 Preheat oven to 350°F.

2 Cut the bread in half, horizontally. Mix the butter, garlic, and parsley together in a small bowl. Spread butter mixture over the the two bread halves. Place on a sturdy baking pan (one that can handle high temperatures, not a cookie sheet) and heat in the oven for 10 minutes.

3 Remove pan from oven. Sprinkle Parmesan cheese over bread if you want. Return to oven on the highest rack. Broil on high heat for 2-3 minutes until the edges of the bread begin to toast and the cheese (if you are using cheese) bubbles. Watch very carefully while broiling. The bread can easily go from un-toasted to burnt.

4 Remove from oven, let cool a minute. Remove from pan and make 1-inch thick slices. Serve immediately.

Method 2 - Soft

Preheat oven to 350°F. Make the butter, garlic, parsley mixture as above. Make 1-inch thick slices into the bread, but do not go all the way through, just to the bottom crust. Put a teaspoon or two of the butter mixture between each slice. Wrap the bread in aluminum foil and heat for 15 minutes in the oven.

Recpie for pancakes:

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 large egg, slightly beaten
  • 2 tablespoons vegetable oil
  • milk, just enough to make pourable batter

Preparation:

Combine dry ingredients. Stir in egg, oil, and enough milk for batter to pour easily. Mix lightly to blend. Place the batter for half hour. The batter rises after half hour so there is a need to mix it again.Pour the baterr on greasy pan or griddle in more than 2 places or according to the amount of batter. Cook pancakes on a hot, well greased griddle. This recipe for pancakes makes 2 to 3 servings. After cooking them place them one on another and pour honey on them.

INGREDIENTS

  • 2 cups (about 1/2 lb) dry macaroni pasta or simply macroni
  • Salt
  • hard boiled egg, chopped
  • 1 roasted red bell pepper*, chopped/ capsicum
  • 1 Tbsp fresh chopped parsley
  • 1/4 cup chopped spring onion or green onion
  • 1/2 teaspoon lemon juice or vinegar
  • A generous amount of mayonnaise (1/3 to 1/2 cup)
  • Several pinches of paprika
  • Freshly ground black pepper to taste

METHOD

1 Cook macaroni, as directed on its package, in at least 2 quarts of salted water (1 teaspoon of salt per quart of water). When cooked through, but still slightly firm (al dente) remove from heat, drain and rinse with cool water until room temperature.

2 While macaroni is cooking, put chopped onions into a small bowl and sprinkle the lemon juice or vinegar over them. This will serve to take the edge off the onions.

2 Combine cooked macaroni, onions, and all other ingredients in a large serving bowl. Adjust seasonings to taste.

Yield: Serves 4.
