  • Oil ¼ cup
  • Bottle gourd 1
  • Round gourd 1
  • Eggplant 1
  • Cauliflower ¼ piece
  • Onion 1 (sliced)
  • Capsicum 1
  • Tomatoes 4
  • Red chilies 4 – 5 (dried)
  • Curry leaves 10 – 12
  • Yellow lentils ½ cup (soaked)
  • Red lentils ½ cup (soaked)
  • Garlic paste 1 tsp
  • Mustard seeds 1 tsp
  • Whole cumin 1 tsp
  • Coriander powder 1 tsp
  • Turmeric 1 tsp
  • Red chili powder 1 tbsp
  • Carom seeds ½ tsp
  • All spice powder ½ tsp
  • Desiccated coconut 2 tbsp
  • Tamarind paste 3 tbsp
  • Salt to taste

Cooking Directions

  1. Cut the tomatoes, coriander, bottle gourd, round gourd, eggplant, cauliflower and capsicum.

  2. Heat oil in a skillet and fry the sliced onion till it acquires golden brown color.

  3. Add garlic paste along with desiccated coconut, cook till coconut turns light gold.

  4. Then add mustard seeds, whole cumin, dried red chilies, carom seeds, curry leaves, turmeric, red chili powder, coriander powder and all spice powder, stir constantly for 2 - 3 minutes.

  5. Now add chopped tomatoes, cover and simmer for 5 minutes, when tomatoes are soft add all vegetables, salt and both lentils.

  6. Cover and stew gently for 25 - 30 minutes until vegetables and lentils tenders.

  7. Uncover and add tamarind paste, cook for 5 more minutes.

  8. Delicious vegetables and lentils masala is ready
