Ingredients

  • Snake-gourd 1 medium
  • Curd or yogurt 1 pint
  • Gram flour 8 oz
  • Garm dhal 2 oz
  • Cumin seeds 1 tsp
  • Mustard seeds 2 tsp
  • Asafoetida 1 pinch
  • Turmeric powder 1 tsp
  • Sugar 2 tsp
  • Green chilies 6
  • Ghee 2 tbsp
  • Coriander leaves a bunch
  • a sprig of curry leaves
  • Coconut ½
  • Salt to taste
  • For savoury Balls:
  • Gram dhal 8 oz
  • Black dhal (urad) 8 oz
  • Green chilies 3-4
  • Cumin seeds 1 tsp
  • Turmeric powder 1 tsp
  • Asafoetida 1 pinch
  • Oil 1 pint or
  • Ghee 1 lb
  • Salt to taste

Cooking Directions

  1. Soak gram dhal and black dhal in water for 2 hours, and then grind coarsely.

  2. Mix in cumin seeds, turmeric, asafetida, finely chopped green chilies and salt.

  3. Shape into firm marble sized balls.

  4. Fry them in hot ghee until golden brown.

  5. Drain and keep aside.

  6. Slice the snake gourd into ½ inch thick rings and boil with a little water till soft.

  7. Add a little water to the curd and churn to form thick buttermilk.

  8. Blend gram flour with buttermilk, leaving no lumps.

  9. Add to it 1 tsp powdered cumin seeds and mustard seeds, finely chopped green chilies, salt and sugar and soaked gram dhal.

  10. Cook, stirring, on a low heat.

  11. Bring to the boil and remove.

  12. Heat 2 tbsp ghee in a saucepan and add the mustard seeds in it.

  13. When the seeds sputter adds turmeric, asafetida and curry leaves.

  14. Pour this into the prepared sambar.

  15. Place each fried savoury ball in a snake gourd ring and arrange in a shallow dish.

  16. Pour sambar over these.

  17. Garnish with coriander leaves, curry leaves and grated coconut.

  18. Serve hot or cold with rice.
