Preheat oven to 175 degrees C.
Grease 9x5-inch loaf pan, or three 3x5-inch loaf pans.
Beat eggs; add sugar, eggnog, butter, rum and vanilla extract.
Sift together in a bowl the flour, baking powder, salt and nutmeg then add to the batter. Stir just to mix.
Pour into greased pan and bake.
For large loaf pan bake for 40-60 minutes and for small loaf pan 30-35 minutes.
Bake until golden brown and toothpick inserted comes out clean.
