Ingredients

  • Eggs 2
  • White sugar 1 cup
  • All purpose flour 2-1/4 cup
  • Eggnog 1 cup
  • Butter ½ cup (softened)
  • Rum extracts 2 tsp
  • Vanilla extracts 1 tsp
  • Baking powder 2 tsp
  • Salt ½ tsp
  • Nutmeg powder ¼ tsp

Cooking Directions

  1. Preheat oven to 175 degrees C.

  2. Grease 9x5-inch loaf pan, or three 3x5-inch loaf pans.

  3. Beat eggs; add sugar, eggnog, butter, rum and vanilla extract.

  4. Sift together in a bowl the flour, baking powder, salt and nutmeg then add to the batter. Stir just to mix.

  5. Pour into greased pan and bake.

  6. For large loaf pan bake for 40-60 minutes and for small loaf pan 30-35 minutes.

  7. Bake until golden brown and toothpick inserted comes out clean.
