Beat the egg whites lightly, then add the yolks, green chillies, cumin seeds, coriander leaves and the seasoning, mix well.
Heat the oil in a pan, lay the sliced potatoes in a single layer, and cook till the potatoes begin to brown underneath.
Then add eggs, reduce heat, cover & cook for 2-3 minutes or till eggs set like on omelette.
Serve hot with bread.
