Ingredients

  • Chicken bones 2 kg
  • Onions 2 medium size (chopped)
  • Celery 2 sticks (chopped)
  • Carrots (if desired) 2 medium size (chopped) (250 gm)
  • Bay leaves 3
  • Black peppercorns 2 tsp
  • Water 5 liters (20 cups)

Cooking Directions

  1. Combine all ingredients in a large pan.

  2. Let it cook for at least 2 hours, uncovered.

  3. Luck warm (strain). Makes about 2.5 liters (10 cups).

  4. Stock can be made 4 days ahead.

  5. Storage covered in refrigerator.

  6. Freeze: suitable (in small bowls). Microwave: not suitable.
