  • Rice (sayla rice) 1kg
  • Yellow food color 1/4 tbsp
  • Saffron (zafran) a pinch
  • Green cardamom (elaichi) 3-4 pieces
  • Sugar 1/2kg
  • Milk 4-6 tbsp
  • Candid fruits (ashrafian/murraba)
  • Pistachio (as required)
  • Almonds (as required)
  • Silver paper (as required)
  • Ghee 1 cup
  • Khoya (dried whole milk) 1 cup

Cooking Directions

  1. Boil 1kg rice along with 1/4 tbsp of yellow food color.

  2. Leave the boiled rice in a strainer for a while, to the moisture drain off.

  3. Heat up one cup of ghee in a pan.

  4. Fry three to four pieces of green cardamom in the pre-heated pan.

  5. Add the rice in the pan having fried cardamom.

  6. Mix a pinch of saffron in  4-6 tbsp hot milk and spread it on the rice.

  7. Cook on medium heat.

  8. Then spread 1/2kg of sugar on the rice mix very gently.

  9. Cover the dish &  let it cook on medium heat on for 10-15mins.

  10. You will notice some sweet juice in the rice, let it cook on medium heat.

  11. Take off the rice when the sweet juice in it drys out.

  12. Finally garnish the dish with khoyia as needed.

  13. Garnishing: Use khoya, candid fruits (murraba), pistachio, almonds & silver paper for garnish.

  14. Serve warm.
