Ingredients

  • Medium-sized potatoes, boiled 4-5
  • Crumbled cottage cheese 1/2 cup
  • For the white sauce:
  • Butter 2 tbsp
  • Flour 1 tbsp
  • Vegetable stock 1 cup
  • For the Italian sauce:
  • Butter 2 tbsp
  • Onion, finely chopped 1
  • Small capsicum, finely chopped 1
  • Tomato puree 1 cup
  • Tomato sauce 1/4 cup
  • Oregano 1/4 tsp
  • Salt and pepper to taste

Cooking Directions

  1. Peel the potatoes and scoop out their centres.

  2. For the Italian sauce melt the butter in a saucepan and fry the onion and capsicum.

  3. Add the tomato puree, tomato sauce, oregano, salt and pepper. Cook for 5 minutes.

  4. Melt the butter, add the flour and fry briefly.

  5. Add the vegetable stock and stir briskly to avoid the formation of lumps.

  6. Cook till the white sauce has thickened.

  7. Add the cottage cheese and mix well.

  8. Mix together the Italian and white sauce, keeping aside a little of the Italian sauce for the topping.

  9. Fill the potatoes with this filling.

  10. Arrange in a baking tray.

  11. Spread the remaining Italian sauce on them and bake at 200°C for 20 minutes.
