Put a cup of water in a pot and add 1 cup sugar to it.
Cook it on high flame for 5-7 minutes to make sugar syrup.
Heat clarified butter in a separate pot, add cinnamon and cloves to it.
When it starts to give a fragrance, add rice that has been socked for at least 2 hours and equal amount of water.
Cover the pot with a lid.
When rice starts to dry, add sugar syrup and half the dried whole milk.
Add half the compote and a few drops of screwpine to the rice.
Add food coloring.
When the sugar syrup starts to dry, cover tightly and cook on very low steam for 10 minutes.
Take Zarda out in a dish, garnish with the remaining dried whole milk, compote and dried fruits before serving.
