  • Apples 1 kg = 2, 1/4 lb
  • Milk 1.5 liters = 6, 1/4 cup
  • Sugar 200g = 1 cup
  • Saffron 1 gm = 2 tsp
  • Milk (to dissolve saffron) 30ml = 2 tsp
  • Green cardamom (crushed) 3 gm = 1/2 tsp
  • Rose water 5 drops
  • Cherries for garnishing
  • Silver leaves (chandi ka warq)

Cooking Directions

  1. The apples: Peel, core and dice.

  2. Put in a wok, add sugar and stew over medium heat, stirring constantly but gently (to prevent the apples from getting mashed) until the sugar has dissolved and the liquid has evaporated.

  3. Remove and cool.

  4. The saffron: Dissolve in warm milk.

  5. Boil milk in a pan, reduce to low heat and simmer until reduced to 600ml = 2, 1/2 cups.

  6. Add saffron, cardamom and rosewater, stir.

  7. Remove and add the stewed apples and stir.

  8. Transfer to a silver bowl and refrigerate.

  9. To serve: Remove from the refrigerator, garnish with cherries and silver leaves and serve cold.
