In 500 BC, an English tourist reached India through Silk Route and passed through a forest. He lied down after being exhausted from thirst and hunger where an old man took him to his shack and offered him a vegetable to eat. He was told while inquiring that the vegetable was ‘bhindi’. The old man gave him the seeds of the vegetable which he sowed when he returned back to his country. He named it ‘okra’.

Ingredients

  • Okra 300 gm
  • Onion 2 (sliced)
  • Tomatoes 2 (sliced)
  • Green chillies 4 to 5
  • Coriander leaves as required
  • Ginger garlic paste 2 tbsp
  • Dry fenugreek a little
  • Red chilli 1 tbsp or to taste (crushed)
  • Red chilli powder ½ tbsp
  • Turmeric ½ tbsp
  • Coriander 1 tbsp (crushed)
  • Cumin seeds 1 tbsp (crushed)
  • Salt to taste
  • Oil ¼ cup
  • Ginger for garnishing

Cooking Directions

  1. Cut okra in round slices.

  2. Heat oil in a pan and fry the sliced okra.

  3. Now pour oil in another pan and add thinly sliced onion to it.

  4. After cooking the onion for 3 to 4 minutes, add all the vegetables and spices and fry very well.

  5. When spices and vegetable are fried properly, add fried okra to it.

  6. Cover the pan with a lid and leave the vegetable to simmer on low flame for 6 to 8 minutes.

  7. Your tasty Fried Okra is ready.

  8. To serve, garnish with coriander leaves and ginger slices.

  9. Tip: To remove stickiness, keep okra in sunlight for a while and then fry it.
