Ingredients

  • Spinach 3 kg
  • Milk 1 liter
  • Lemon juice or vinegar 2-3 tbsp
  • Oil 1/2 cup
  • Chopped garlic 2-3 cloves
  • Crushed red chili 1 tbsp
  • Salt to taste
  • All spice powder 1 tsp
  • Cumin seed 1 tsp
  • Green chili 4-5
  • Onion 1
  • Cream 1 cup

Cooking Directions

  1. Rinse spinach in water 3–4 times to wash it properly.

  2. Finely slice onion and saute’ in hot oil. Do not brown them.

  3. In a separate pan, boil water and boil spinach in it for 3 minutes

  4. Put the boiled spinach in tap water to cool it to preserve its bright green color.

  5. Now combine onion, spinach and green chili and blend/grind them together.

  6. Boil milk and add vinegar or lemon juice to it.

  7. Simmer it till it curdles.

  8. Now hang the curdled milk in a muslin so all the whey properly drains out.

  9. Then cut the cheese into cubes. And if desired, soak them in water to keep them soft. And add cubes at the time of serving.

  10. Heat rest of the oil in a pan and fry garlic and cumin seeds.

  11. Add spinach, red chili and salt and cook on medium heat.

  12. In the end, add cream.

  13. When ready, takeout in a serving bowl and sprinkle all spice powder and cheese.

  14. Serve hot with naan or chapati.

  3. Nabanita, all spice in South Asian cooking is referred to a blend of common South Asian spices like peppercorns, cinnamon, clove, nutmeg, bay leaves, mace, cumin, black cardamom etc. All spice is called "Garam Masala" in Urdu and Hindi. It is easily available at Indian grocery stores.
