  • Chicken breasts 4 skinless (boneless, cut into chunks)
  • Green chillies 3 large (de-seeded and chopped)
  • Coriander powder 1 tsp
  • Turmeric powder ½ tsp
  • Fresh ginger 1 inch (peeled)
  • Garlic cloves 2 (peeled)
  • Fresh coriander large bunch (chopped)
  • Sunflower oil 2 tbsp
  • Curry leaves 10
  • Onions 2 large (sliced)
  • Coconut milk 400 gm
  • Tamarind paste 2 tsp
  • Lime juice 1 lime
  • Salt a pinch

Cooking Directions

  1. Take green chillies, coriander powder, turmeric powder, ginger and garlic in a blender.

  2. Add a splash of water and a pinch of salt.

  3. Blend to make a paste.

  4. Heat the oil in a large saucepan, add curry leaves and stir, then add the paste, onions and chicken.

  5. Cook for 3 to 4 minutes.

  6. Add the coconut milk, bring to boil, then simmer for 10 to 15 minutes or until the chicken becomes tender.

  7. Stir in the tamarind paste and lime juice.

  8. Garnish with fresh coriander.

  9. Serve hot.
