  • Turkey breast 4 (cut into long strips)
  • Cumin 1 tbsp (roasted, ground)
  • Hot milk 1/4 cup
  • Rosemary 2 large springs (chopped)
  • Salt to taste
  • Yogurt 200 gm
  • Coriander 1 tbsp (roasted and ground)
  • Saffron 3-4 strains
  • Red chili flakes 1 - 2 tsp
  • Salt to taste
  • Skewers as required
  • Salad for Serving:
  • Cucumber 1
  • Beetroot 1
  • Curd 1/3 cup
  • Sesame seed 1/2 tsp

Cooking Directions

  1. Chop veggies and mix into curd and sprinkle sesame seed toss well this salad and refrigerate.

  2. In hot milk soak saffron for 15 minutes.

  3. Hang curd into thin cloth and separate water.

  4. Marinate turkey fillets with mixing all ingredients for overnight or minimum 1 hour.

  5. Thread marinated fillets into skewers and bbq or cook on griddle.

  6. Serve hot with veggie salad.
