These colorful roasted peppers are full of Mediterranean flavors. They make a great simple starter for a dinner party or served as part of a summer buffet. To serve chilled, allow the peppers to cool completely then cover and leave in the fridge for a couple of hours.

  • Large red peppers 4
  • Garlic cloves (peeled and thinly sliced) 3
  • Cherry tomatoes (halved) 115 g
  • Pitted black olives 55 g
  • Olive oil 4 tbsp
  • Pesto sauce 2 tbsp
  • Feta cheese (thinly sliced or crumbled) 75 g
  • Fresh basil leaves to garnish

Cooking Directions

  1. Preheat the oven to 200 degrees.

  2. Slice each pepper in half, cutting through the stalks and remove the seeds.

  3. Place the pepper halves, cut side up in a shallow roasting tin.

  4. Top with the garlic, tomatoes and olives.

  5. Drizzle over half the oil and season with salt and freshly ground black pepper.

  6. Roast for 25-30 mins until the peppers are just tender and lightly charred in places.

  7. Leave to cool for 10 mins.

  8. Blend the pesto sauce with the rest of the olive oil.

  9. Serve the warm peppers topped with the feta cheese and basil dressing.

  10. Garnish with fresh basil leaves.
