Shab daig is a regional dish, right from Kashmir. One of the most authentic recipe, you have ever tried. It is a classic combination of Mutton with beef koftas and turnip. Even if you had tried food across the globe, do not miss this exotic recipe.

Ingredients

  • Mutton ½ kg
  • Turnip ½ kg
  • Carrots 2
  • Onions 3 (sliced)
  • Green chilies 4
  • Lemons 2
  • Tomatoes 4
  • Fresh coriander 1 bunch
  • Yogurt 1 cup
  • Oil 1 cup
  • Turmeric powder 1 tsp
  • All spices powder 1 tsp
  • Sugar 1 tsp
  • Red chili powder 1 tbsp
  • Ginger garlic paste 1 tbsp
  • Coriander powder 2 tbsp
  • Roasted flour 3 tbsp (dissoled in ½ cup water)
  • Salt to taste
  • For Kofta:
  • Beef mince 2 cups
  • Bread slices 2
  • Cumin powder 1 tsp (ground)
  • All spices powder 1 tsp
  • Salt to taste

Cooking Directions

  1. In a cooking pot, add mutton, oil, ginger garlic paste, turmeric powder, red chili powder, salt and 2 - 3 cups of water, allow to cook till meat tenders.

  2. Meanwhile prepare koftas by chopping beef mince, bread slices, cumin powder, salt and all spices powder in chopper, shape them in medium size koftas.

  3. Chop each turnip into two and carrot into small pieces.

  4. When mutton tenders and water gets dried up, add tomatoes and sauté.

  5. Let the tomatoes soften then add a cup of yogurt and stir for few minutes.

  6. Shallow fry turnip, carrot and koftas and add to mutton mix.

  7. When you see oil separated from the remaining gravy, add luke warm water and dissolved flour and allow simmering on low flame.

  8. At the end sprinkle all spices powder, bunch of fresh coriander, lemon juice, green chilies and serve.
