  • Frozen puff pastry ½ sheet thawed
  • Cooking spray few
  • Fresh herbs(basil,parsley, chives etc) 1 tbsp (chopped)
  • Eggs 2 large
  • Red peppers 2 tbsp (chopped and roasted)
  • Heavy cream 1/2 cup
  • Salt ¼ tsp
  • Pepper 1/8 tsp (freshly cracked)
  • Red pepper 1/8 tsp (crushed)

Cooking Directions

  1. Preheat oven to 400 F degrees.

  2. Now lightly grease the cups of a mini muffin pan with cooking spray.

  3. Unfold pastry sheet on a lightly floured surface.

  4. Roll the sheet into 12 inch square.

  5. Now cut it into 20 equal squares (2 inches per squares).

  6. Take each square and press into mini muffin pan's cup.

  7. In a medium bowl, whisk all ingredients together up until puff pastry.

  8. Spoon each cup with about 1 tbsp egg mixture.

  9. Now its ready to bake.

  10. Bake it for 12 - 14 minutes or until you see the filling is set and quiches are turned golden brown.

  11. Take out the pan and let it cool for few minutes.

  12. Remove the cups and serve them.
