Ingredients

  • Chicken 10-12 pieces (thighs and leg pieces)
  • Olive oil ¼ cup
  • Garlic paste 1 tsp
  • Lemons 2 (1 juice, 1 sliced)
  • Oranges 2 (1 juice, 1 sliced)
  • Sugar 2 tbsp
  • Italian seasoning 1 tsp
  • Paprika ½ tsp
  • Onion powder 1 tsp
  • Red chilli ½ tsp (crushed)
  • Salt and black pepper to taste
  • Onion 1 medium (finely sliced)
  • Thyme 1 tsp
  • Rosemary 2 tsp
  • Parsley, rosemary, thyme for garnish

Cooking Directions

  1. Preheat oven to 400 degrees F.

  2. In a small bowl mix together olive oil, garlic paste, 1 lemon juice, 1 orange juice, sugar, Italian seasoning, paprika, onion powder, red chilli and salt and pepper.

  3. Coat chicken in olive mixture, turn pieces to coat nicely.

  4. Place chicken pieces in baking dish, skin side up.

  5. Pour remaining olive mixture over chicken pieces.

  6. Arrange slices of lemon, orange and onion around and under the chicken.

  7. Sprinkle all over thyme, rosemary, salt and pepper.

  8. Bake about 1 hour or until chicken is cooked and juices run clear.

  9. Set chicken to a serving platter and garnish with additional chopped fresh herbs, if desired.
