Ingredients

  • To be ground into a smooth paste:
  • Coconut(freshly grated) 3/4 cup
  • Whole Dry Red Chillies 8
  • Cumin seeds 1 tsp
  • Water 1/4 cup
  • Other ingredients:
  • Kala vatana 1/4 cup
  • Salt to taste
  • Red Pumpkin(chopped) 2 1/2 cups
  • Coconut Oil 1 tbsp
  • Mustard Seeds 1 tsp
  • Urad Dal 2 tsp
  • For the garnish:
  • Curry Leaves 8-10

Cooking Directions

  1. Soak the kala vatana in enough water overnight or for at least 5 to 6 hours.

  2. Drain, add 1 cup of water and pressure cook for 3 to 4 whistles.

  3. Allow the steam to escape before opening the lid.

  4. Add the pumpkin, 1 cup of water and salt, mix well and cook on a medium flame for 10 to 12 minutes, while stirring occasionally.

  5. Add the prepared paste, mix gently and simmer for 5 to 7 minutes. Keep aside.

  6. For the tempring, heat the oil in small pan and add the mustard seeds.

  7. When the seeds crackle, add the urad dal and saute for few seconds.

  8. Pour this tempering over the curry and mix well.

  9. Serve hot garnished with curry leaves.
