This low fat Spaghetti Bolognese is rich and satisfying, and easy to make. Bolognese sauce (ragù alla bolognese in Italian, also known by its French name sauce bolognaise) is a meat-based sauce for pasta originating in Bologna, Italy. Bolognese sauce is sometimes taken to be a tomato sauce, but authentic recipes have only a small amount of tomato concentrate.

Ingredients

  • Onion Chopped 1
  • Red Capsicum 1
  • Olive Oil 2 tablespoons
  • Garlic 2 cloves crushed
  • Chicken Mince 500 gms
  • Tomato Pasta sauce 2 cups
  • Thyme 1/4 tsp
  • Rosemary 1/4 tsp
  • Pitted Olives chopped 2 tbsps
  • Salt to taste
  • Freshly Ground Black Pepper
  • Spaghetti (boiled) 400 gms
  • Feta Cheese 125 gms
  • Tomato Pasta Sauce
  • Tomato Sauce or Puree 1 can
  • Garlic 2 cloves
  • Olive oil 1 tbsp
  • Basil fresh 2 tsps fresh chopped
  • Parsely fresh 1 tsp chopped.

Cooking Directions

  1. Finely chop the capsicum.

  2. In a large pan heat the oil and add the chopped onions and cook for 4 minutes

  3. Now add the chopped capsicum and garlic and cook over medium high heat for 2 minutes

  4. Continue heating until lightly browned and liquid has absorbed.

  5. Now stir occasionally and break up any lumps as the mince cooks.

  6. Add tomato pasta sauce, thyme, rosemary and bring to a boil. reduce heat and simmer, uncovered for 5 minutes or until sauce has thickened.

  7. Add olives and stir to combine.

  8. Season with salt and black pepper to taste.

  9. To serve place the spaghetti in individual portions and pour the ready sauce over

  10. Then mix the sauce and spaghetti and serve with some crumbled feta cheese sprinkled on top.

  11. To make tomato pasta sauce

  12. Heat oil in a pan add the garlic saute for a minute

  13. Now add the tomato puree and salt and pepper cook for 2 mins or until boiling then add the herbs and sugar as required.
