A delicious, full of flavors bhaji to enjoy with rice. Sai Bhaji has all the flavors, spinach, fenugreek, carrots, brinjal, potatoes, gram lentils and all mashed up to make a delicious bhaji.

  • Spinach 2 medium bunches
  • Khatta palak 1 medium bunch
  • Cloves of garlic 4-5
  • Chopped fenugreek leaves 2 tbsp
  • Mixed chopped vegetables (carrots, brinjals) 250 gm
  • Large potato 1
  • Gram lentils (pre-soaked for 1 hour) 1/2 cup
  • Green chillies 3-4
  • Salt to taste
  • Water 1/2 cup
  • Coriander powder 1, 1/2 tsp
  • Turmeric powder A pinch
  • Onions 2

Cooking Directions

  1. Chop all leafy vegetables coarsely.

  2. Chop the potato and onions.

  3. Heat oil in a saucepan, lightly fry the garlic.

  4. Add fenugreek and fry for 1 minute.

  5. Add all the vegetables and other dry ingredients.

  6. Add salt and water and cook till lentil is cooked.

  7. Take off from heat and mash with a spoon or eggbeater to form a kind of thick paste.

  8. Serve with rice.
