  • Semolina (suji) 1 cup
  • Ghee 85 gm
  • Water 4 cups
  • Sugar 75 gm
  • Green cardamoms (choti elaichi) 4
  • Saffron (kesar) a few strands
  • Almonds (badam), chopped 10

Cooking Directions

  1. Heat the ghee in a wok (kadhai).

  2. Add the semolina and fry till it is golden brown and a nice aroma emanates.

  3. Make a syrup by boiling the water, sugar, green cardamoms, and saffron together for 5 minutes.

  4. Mix this syrup with the semolina, stir briskly and cook till the ghee surfaces and the semolina leaves the sides of the pan.

  5. Serve hot garnished with almonds.

  6. Variation:

  7. Raisins and cashew nuts can also be added.
