Ingredients

  • Vegetable broth or reduced sodium chicken broth ½ cup
  • Soy sauce 3 tbsp (reduced sodium)
  • Cornstarch 3 tbsp (divided)
  • Sugar 2 tbsp plus teaspoon
  • Red pepper ¼ tsp (crushed) or more to taste
  • Package extra-firm water packed tofu 1 14-ounce (drained)
  • Salt ¼ tsp
  • Canola oil 2 tbsp (divided)
  • Garlic 1 tbsp (minced)
  • Fresh ginger 1 tbsp (minced)
  • Broccoli florets 6 cups
  • Water 3 tbsp

Cooking Directions

  1. Combine broth, soy sauce, 1 tablespoon cornstarch, sugar and crushed red pepper in a small bowl. Set aside.

  2. Cut tofu into ¾ inch cubes and pat dry, then sprinkle with salt.

  3. Place the remaining 2 tablespoons cornstarch in a large bowl.

  4. Add the tofu; toss gently to coat.

  5. Heat 1 tablespoon oil in a large nonstick skillet or wok over medium high heat.

  6. Add the tofu; cook, undisturbed, until browned, about 3 minutes.

  7. Gently turn and cook, stirring occasionally until browned all over, 2 to 3 minutes more.

  8. Transfer to a plate.

  9. Reduce heat to medium.

  10. Add the remaining 1 tablespoon oil, garlic and ginger; cook until fragrant, about 30 seconds.

  11. Add broccoli and water; cover and cook, stirring once or twice, until tender-crisp, 2 to 4 minutes.

  12. Stir the reserved broth mixture and add to the pan.

  13. Cook until the sauce has thickened, 1 to 2 minutes.

  14. Return the tofu to the pan toss to combine with the broccoli and sauce.
