Ingredients

  • Undercut 1 kg
  • Oil 1 cup
  • Onion 3 (chopped)
  • Yogurt 1 cup
  • Whole red chilies 8 (chopped)
  • Ginger garlic 1 tbsp (chopped)
  • White cumin seeds 1 tsp
  • Coriander seeds 1 tbsp
  • Black pepper 1 tsp
  • Green chili 4
  • Salt to taste
  • Butter ½ tbsp
  • For Stock:
  • Onion 1
  • Ginger 1 inch piece
  • Garlic 1
  • Cinnamon stick 1
  • Coriander seeds 1 tsp
  • Salt to taste

Cooking Directions

  1. Take 3 cup water in a wok along with undercut, onion, ginger, garlic, cinnamon stick, coriander seeds and salt to make stock.

  2. Boil it and after 5-10 minutes take out the meat and drain the stock.

  3. Now take 1 cup oil in a wok and fry chopped onions till golden brown.

  4. Take them out in a tissue paper make it dry and crisp.

  5. Now add the meat in that oil.

  6. Blend yogurt and onion together in a blender.

  7. When the water in the meat dries add in the blended mixture and add red chilies, ginger garlic, white cumin seeds, coriander seeds, black pepper and green chilies.

  8. Then add in some salt and stock.

  9. Cook it on a low flame.

  10. Add butter when the oil separates and cook it for 10 minutes on a low flame.

  11. Serve Dahi Kashmiri Gosht with nan.
