  • Bitter gourd (karelas) 1 lb
  • Prawns 1 lb
  • Onions 1/2 lb
  • Dry red chilies 6
  • Cumin seeds 1/2 tsp
  • Turmeric a small piece
  • Green chilies 3
  • Ginger 1 piece
  • Clove of garlic 1
  • Ghee 1 tbsp
  • Coconut oil 2 tbsp
  • Jaggery 4 oz
  • Vinegar 2 tbsp
  • Tamarind to taste (soaked in a little hot water)
  • Salt to taste

Cooking Directions

  1. Cut the gourd into round slices.

  2. Wash thoroughly. Remove all the seeds and pith.

  3. Grind the dry spices with tamarind water.

  4. Cut up all the green spices.

  5. Set both oil and ghee on the fire and fry the green spices for a few minutes.

  6. Add the ground spices, vinegar and salt to taste.

  7. Shell and wash the prawns.

  8. When the mixture boils, put in the vegetables and cook over a low fire till tender.

  9. Add prawns and allow to simmer.

  10. Lastly, add jagger before taking off the fire.
