Colorful rice pulao not only looks attractively presentable, it also tastes great. Chicken mince adds a nice edge to this vibrant pulao. Serve hot with yogurt sauce.

  • Rice 1 kg
  • Chicken mince 750 gm
  • Onion (chopped) 1 cup
  • Capsicum 1 cup
  • Tomatoes 4 (boiled)
  • Garlic 1 tbsp (chopped)
  • Red chili powder 1 tsp
  • Oil 4 tbsp
  • Butter 2 tbsp
  • Fresh coriander leaves ½ bunch
  • Mint leaves ½ bunch
  • Coconut powder 4 tbsp
  • Garlic cloves 4
  • Lemon 1
  • Onion 1
  • Green chili 4
  • Yellow food color as required
  • Salt to taste

Cooking Directions

  1. Boil rice and divide into three parts.

  2. Add fresh coriander, mint, coconut powder, 4 garlic cloves, lemon juice, 1 onion, green chili, salt to taste and little water and prepare chutney.

  3. Saute 1 cup onion in oil then add 1 tablespoon garlic, red chili powder and salt and cook well.

  4. Then add mince and cook for 4 to 5 minutes.

  5. Grind tomatoes and add in mince.

  6. Finally add capsicum and cook it.

  7. Now add chutney in 1st portion of rice and mix food color in another part and third one will be white.

  8. Now add yellow food color rice in cookware and then make a mince layer.

  9. Next make a layer of white rice, then make a mince layer and layer of chutney rice.

  10. Again add yellow food color rice on top and press well.

  11. Then add 2 tablespoon butter and sprinkle black pepper on top.

  12. Cover and steam on low flame for 10 - 15 minutes.

  13. Now turn the cookware in a serving dish, but take care of layers while turning.

  14. Colorful layer rice pulao is ready to serve.
