  • Brinjal 4 (cubes)
  • Onion 1
  • Oil ¼ cup
  • Garlic 4 – 5 cloves
  • Tomatoes 4 (boiled and chopped)
  • Water 1 cup
  • Chili powder 1 tbsp
  • Salt to taste
  • Bay leaf 1
  • Cinnamon 1 stick
  • Turmeric 1 tsp
  • Cumin powder 1 tsp
  • Garam masala powder ½ tsp
  • Coriander leaves as required
  • Peas ½ cup (boiled)

Cooking Directions

  1. Cut brinjals into cubes and soak in water.

  2. Chop onion and keep aside.

  3. Heat oil in a wok, add onion and garlic clove. Fry till golden brown.

  4. Now add tomatoes, brinjal, 1 cup water, chili powder, salt, bay leaf, cinnamon stick, turmeric, cumin powder, garam masala powder and coriander leaves.

  5. Cover and cook for 8 – 10 minutes.

  6. Now remove lid, add boiled peas, fry well over high flame till water dries.

  7. Dish it out and serve.
