Its the queen of all kababs and is a specialty of Iran. Its extremly delicious and quite different in taste, here is an easy to make recipe to help you prepare this delicious kebabs with rice.

  • Mince ½ kg
  • Onion ground ½ cup
  • Ginger paste 1 tbsp heaped
  • Salt 1 tsp heaped
  • Black pepper ½ tsp
  • Butter 2 tbsp
  • Soda bicarbonate ¼ tsp
  • Ingredients for Rice:
  • Rice ½ kg
  • Butter 3 tbsp
  • Saffron ½ tsp
  • Water 2 tbsp
  • Tomatoes 2

Cooking Directions

  1. Method for Kabab: Marinate mince with ground onions, ginger paste, salt, black pepper, butter and soda bicarb. Leave for 30 minutes,.

  2. Then shape into long seekh kabab.

  3. Now grill for 10 minutes. Lower a piece of burning charcoal and add a few drops of oil over it; cover immediately.

  4. Serve with rice.

  5. Method for Rice: In a large pot boil rice with salt until ¾ of the rice is cooked.

  6. Then drain water and put the rice back in the pan.

  7. Spread butter on top of the rice.

  8. Sprinkle saffron mixed with 2 tbsp water and simmer for 10 minutes.

  9. Remove from heat, dish out the rice in a large platter.

  10. Garnish with grilled tomatoes and kebabs.
