Drain tuna and mash in a bowl.
Sprinkle lemon rind over the tuna, this counteracts any fishy taste.
Wash the tomatoes and remove the hard portion near the stem.
Chop tomatoes, there should be about 1 cup.
Saute untill shallots are translucent.
Add tomatoes, parsley, and vinegar and cook for 5 minutes, stirring.
Add tuna and lemon rind and cook for 2 minutes.
Season with salt and pepper to taste.
This is good with green fettuccine and ziti.
This sauce can be cooked with rice instead of being served over it.
