Sooji ka halwa is a Pakistani breakfast delicacy. It is usually served at breakfast with purris. It can also be enjoyed as a desert.

  • Semolina 3 tbsp
  • Gram flour 1 tbsp
  • Sugar 3 tbsp
  • Ghee 3 tbsp
  • Warm milk 2 tbsp
  • Water 2/3 cup
  • Slivered almonds 2 tbsp
  • Cardamom seeds, lightly crushed 1 tsp
  • Raisins 2 tbsp
  • A pinch of saffron
  • Silver leaves as required

Cooking Directions

  1. Combine the sugar and water.

  2. Bring to a boil.

  3. Lower heat, add the raisins and simmer for a few minutes.

  4. Remove from heat.

  5. Heat the saffron slightly and soak in warm milk.

  6. Heat the ghee and roast the semolina and gram flour until it is pale golden.

  7. Stir continuously to avoid burning.

  8. Add the sugar syrup and milk in a thin stream.

  9. Continue stirring until the mixture thickens.

  10. Pour into a serving dish and let it cool.

  11. Decorate with silver leaves.
