  • Cucumber 2 (cut into 2cm long slices)
  • Salt and black pepper powder to taste
  • Wholemeal bread wraps 4
  • Hummus 250g
  • Pine nuts 25g
  • Spinach leaves 55g
  • Red pepper 1 medium (thinly sliced)
  • Onion 50g (thinly sliced)
  • Fresh mint leaves 25g

Cooking Directions

  1. Sprinkle salt and black pepper powder on cucumber slices and toss.

  2. Spread a generous amount of hummus on each wrap.

  3. Sprinkle pine nuts followed by cucumber slices, spinach, red pepper, onion and fresh mint.

  4. Roll them up and cut in half diagonally; serve.
