Heat oil in a frying pan and fry mince till it changes colour.
Add water and cook till water dries.
Remove from flame and add fish sauce, lemon juice, red chillies and salt, allow to cool.
Add spring onions, peanuts, mint and coriander, mix.
Garnish serving dish with lettuce and place mince on top.
Garnish with ginger and onion rings and serve.
