Though bajra is grown only in certain parts of Rajasthan, bajra rotis are relished all over the state. Thickly rolled bajra rotis are cooked over "kanda" (cow dung cakes) in the villages. That is the authentic way of preparing them because it imparts a smoked flavour to the rotis. Bajra rotis can accompany virtually any vegetable or kadhi on a Rajasthani menu. Bajra roti, lahsun ki chutney and onions is the staple diet of the locals. Although absolutely simple to make, these rotis are delicious

Ingredients

  • Bajra atta 1 1/2 cups
  • Salt 1 tsp
  • Sugar 1 tsp
  • Ghee or butter

Cooking Directions

  1. Add salt and sugar in the bajra atta

  2. and form a soft dough with slightly warm water.

  3. Take a small ball of this dough, apply a little dry atta

  4. on both hands and then form a round roti with the hands.

  5. Press the sides of the rotis so that they do not break.

  6. Then cook from both sides on a griddle.

  7. Apply butter liberally before serving.

  8. In this roti, one can also add 1h cup gram flour.

  9. Paranthas can be made the same way, only 1 tbsp.

  10. ghee is added in the atta before forming dough.
