  • Okra 30 - 35 (about 300-350 gms)
  • Curry leaves 7 – 8
  • Mustard seeds 1 tsp
  • Asafoetida ¼ tsp
  • Green chili 1
  • Oil 1 – 2 tbsp
  • Lemon Juice ½ lemon
  • For Stuffing:
  • Sesame seeds 1 tbsp
  • Coconut ¾ cup
  • Peanuts 2 tbsp
  • Turmeric ½ tsp
  • Coriander powder 1 tsp
  • Cumin powder ½ tsp
  • All spice powder 1 tsp
  • Salt 1 tsp

Cooking Directions

  1. Wash and clean okra and drain the water.

  2. Then leave it to dry on a layer of kitchen napkins.

  3. Dry roast the sesame seeds (for 2-3 minutes) on stove in skillet.

  4. Once done, take the seeds out and coarsely crush them.

  5. Roast the coconut (for 4-5 minutes) and peanuts (7-8 minutes) using same skillet.

  6. Now crush the peanuts by adding it to same powdered sesame seeds and mix it well.

  7. Add dry spice powder and salts in the mix in a wide platter and mix it well and left aside to cool down.

  8. Now you need to cut tops and bottoms of okra and in the center, make a slit carefully from just one side (don’t cut the okra into two).

  9. Now, start stuffing okra with the mix.

  10. Add 1 tbsp of oil into a heated wide flat bottom skillet.

  11. Add curry leaves, green chili, mustard seeds and asafoetida.

  12. Once the mustard seeds start crackling, lay a single layer of stuffed okras and left over stuffing.

  13. Cook it for 10-15 minutes on heat and stir gently. (if you feel okra is sticking to pan, then you can add remaining tbsp of oil).

  14. Once cooked, sprinkle the lemon juice and mix well.

  15. Serve it hot with chapatis or rice.
