Kebabs have become very popular in Western Food culture over the last few decades and are commonly referred to as "shish kebab" at cookouts and American menus. Shish kebab is translated to skewer of grilled meat and encompasses many variations of the kebab. In the Middle East, kebabs are not always prepared on a skewer and do not always consist of cubed meat and veggies.

Ingredients

  • Lamb Leg Fillet 700 gms
  • For The Marinade:
  • Lemon 1
  • Onion Finely chopped 1 large
  • Garlic 2 cloves finely minced
  • Bay Leaves 2
  • Cayenne Pepper 1/2 tsp
  • Fresh Thyme 1 tbsp
  • Fresh mint leaves 1 tsp
  • Olive Oil 3 tbsps
  • Salt to taste
  • Crushed black pepper to taste
  • Oil to brush the grill pan.

Cooking Directions

  1. Cut the lamb into cubes not more than 1 1/2 inches.

  2. To make the marinade in a bowl finely grate the lemon rind into a bowl,

  3. Now add the finely chopped onion, garlic, bay leaves, cayenne pepper, chopped up fresh thyme and mint along with the olive oil and mix well well.

  4. Season with salt and pepper.

  5. Now add the lamb cubes to this marinade and mix well and coat it fully and leave in the fridge overnight or atleast 4 hrs.

  6. Thread the lamb onto skewers spacing them slightly apart. preheat oven to 180 C.

  7. Heat a grill pan and brush with oil.

  8. When at smoking point at the kebabs and cook till u get some grill lines and charred bits on the meat.

  9. Now place the skewers in a baking tray and place in the oven to cook for a further 8 minutes or until the meat is tender and just cooked, serve hot!

  10. You could barbeque them on a charcoal grill for that lovely smoky flavor.
