Ingredients

  • Mutton 1/2 kg
  • Clarified butter 3/4 cup
  • Onions (medium) 3
  • Turmeric powder 1 tsp
  • Ginger/garlic paste 2 tbsp
  • Red chilli powder 2 tsp
  • Red chillies crushed 1 tsp
  • Green cardamoms 2
  • Black cardamom 1
  • Black pepper powder 1 tsp
  • Whole coriander seeds 1 tsp
  • Cinnamon 1 stick
  • White cumin seeds 1 tsp
  • Cloves 1/2 tsp
  • Nutmeg and mace 1/2 tsp
  • Black cumin seeds 1/2 tsp
  • Refined flour 3 tbsp
  • Milk 1/2 cup
  • Salt to taste
  • Green chillies 2
  • Lemon (sliced) 1

Cooking Directions

  1. Heat oil in a heavy base pot.

  2. Add meat, onions, turmeric powder, ginger/garlic and red chilli powder to it.

  3. Cook for 5-8 minutes while stirring continuously till meat changes color.

  4. Add 2 cups water and leave on low flame for 1/2 an hour.

  5. Put white cumin seeds, black pepper, green and black cardamoms, cinnamon, nutmeg and mace in a grinder and mix well.

  6. Sieve the ground spices with a muslin cloth.

  7. Add the spices to the meat.

  8. Cover with a lid and leave to cook on low flame for a few minutes.

  9. Dissolve refined flour in 1/2 cup milk and add to the pot.

  10. Cover the lid and let it cook on low flame for 10-15 minutes.

  11. Add black cumin seeds and salt as well.

  12. Garnish with green chillies, finely slivered ginger and lemon.

  13. Serve with naan.
