Cooking Directions

  1. Soak urad dhal and rice in separate containers in water overnight.

  2. The next day, grind the dhal to a paste-like consistency, but not very thick.

  3. Then grind the rice adding water to make a thick paste.

  4. Mix together in a large vessel and add salt.

  5. Keep aside for 24 hours to rise.

  6. Pour 2 big spoonfuls of the paste into fireproof ramekin dishes or katoris and steam the idlies for 30-35 minutes.
