Ingredients

  • Basmati rice 1 1/2 cups
  • Raw jackfruit 1/4 kg
  • Bay leaves 3
  • Medium sized onions 2
  • Large tomato 1
  • Whole cardamoms 2
  • Ghee 3 1/2 cups
  • Salt to taste
  • Oil for frying

Cooking Directions

  1. Cut out the hard outer skin and the fibrous portions of the jackfruit.

  2. Chop it into 2" pieces and deep fry in oil till golden brown.

  3. Chop the onions and tomatoes and cook in oil till nicely browned.

  4. Add the jackfruit and simmer with a little water till tender

  5. and the jackfruit is dry.Heat 1 tbsp. ghee, add bay leaves and cardamoms.

  6. Then add the washed rice.

  7. Pour water on rice mixture, add salt to taste and boil on a high flame for about 7 minutes till only a little water is remaining.

  8. Reduce heat and simmer for 10 minutes.

  9. The rice should be cooked and each grain should be separate.

  10. Mix jackfruit into rice.

  11. Heat and serve.
