Ingredients

  • Gelatin 2 tsp
  • Eggs separated 4
  • Salt 1/4 tsp
  • Orange juice 1/2 cup
  • Cream 3/4 cup
  • Cold water 1/4 cup
  • Sugar powder 3/4 cup
  • Lemon juice 2 tbsp
  • Orange essence (optional) few drops
  • Orange color (optional) 1/4 tsp

Cooking Directions

  1. Soak gelatin in cold water.

  2. Beat together egg yolks, salt, lemon juice, orange juice and 1/2 cup sugar in a heat proof bowl.

  3. Place it on top of a pan of boiling water, and cook until thick.

  4. Add soaked gelatin and stir till dissolved.

  5. Remove from heat and let it cool down.

  6. Beat egg whites until stiff.

  7. Then add in remaining sugar and orange essence.

  8. Fold into cold yolk mixture.

  9. Mix in whipped cream.

  10. Reserve half the cream for garnishing.

  11. Pour in the dish and refrigerate till firm.

  12. Garnish with cream and a few orange slices.
