Easy to make and instantly to cook up, this potato curry is ideal for regular lunch's and dinner's. The addition of tamarind pulp and spices gives a wonderful aromatic and flavoursome side dish.

  • Potatoes 1/2 kg
  • Lemon 2
  • Chopped onions 2
  • Chopped green chilies 6
  • Curry leaves few
  • Green coriander chopped 1/2 bunch
  • Chopped mint 1/2 bunch
  • Tamarind pulp 1/2 cup
  • Oil 1/2 cup
  • Cumin powder 1 tsp
  • Sugar 1 tsp
  • Turmeric 1 tsp
  • Crushed mustard seeds 1 tsp
  • Onion seeds 1/2 tsp
  • Red chili powder 1/2 tbsp
  • Salt to taste

Cooking Directions

  1. Boil, peel and mash potatoes.

  2. In a large skillet, on a medium flame, add the mashed potatoes along with 1 glass of water, lemon juice, finely chopped onions

  3. Now add finely chopped green chilies, a few curry leaves, finely chopped mint leaves, tamarind pulp

  4. Add sugar, turmeric powder, ground mustard seeds, onion seeds, salt as required and cup oil.

  5. Cook for 5 minutes and remove.

  6. Now the Potatoes are ready to serve.
