Wash beets. Do not peel them.
Cut into 1/4" slices.
Add salt to water and mix well till dissolves.
Drizzle lemon juice over beets.
Now put the beets in sterilized jars.
Pour in the salted water into each jar, enough to top the beets.
Seal the jars and place them in a cool place for at least 7 days before opening.
