Ingredients

  • Dark chocolate 3, 1/2 ounces
  • Milk 1, 1/4 cups
  • Butter 2 tbsp
  • Eggs(separated) 4 large
  • Cornstarch 1 tbsp
  • Superfine sugar 4 tbsp
  • Vanilla extract 1/2 tsp
  • Dark chocolate chips 2/3 cup
  • Superfine & confectioners sugar to dust
  • For Chocolate custard:
  • Cornstarch 2 tbsp
  • Superfine sugar 1 tbsp
  • Milk 2 cups
  • Dark chocolate 1, 3/4 ounces

Cooking Directions

  1. Grease a 5 cup souffle dish and sprinkle with superfine sugar.

  2. Break the chocolate into small pieces.

  3. Heat the milk with the butter in a pan until almost boiling.

  4. Mix the egg yolks, cornstarch, and superfine sugar in a bowl and pour in some of the hot milk, while beating.

  5. Return the mixture to the pan and cook gently, stirring constantly, until thickened.

  6. Add the chocolate and stir until melted.

  7. Remove the pan from the heat and stir in the extract.

  8. Beat the egg whites until standing in soft peaks.

  9. Fold half the egg whites into the chocolate mixture.

  10. Fold in the rest with the chocolate chips.

  11. Pour into the dish and bake in a preheated oven at 350F for 40-45 minutes, until well risen.

  12. Meanwhile, make the custard.

  13. Put the cornstarch and sugar in a small bowl and mix to a smooth paste with a little of the milk.

  14. Heat the remaining milk until almost boiling.

  15. Pour a little of the hot milk into the cornstarch, mix well, then pour it bake into the pan.

  16. Cook gently, stirring, until thickened.

  17. Break the chocolate into pieces and add to the custard, stirring until melted.

  18. Dust the souffle with sugar and serve immediately with the chocolate custard.
