Ingredients

  • Medium sized lauki 1
  • Eggs (hard-boiled) 3
  • Onions 2
  • Coriander powder 1 tsp
  • Small piece coconut 1
  • Khoya 1 cup
  • Green chillies 4
  • Ginger 1" piece
  • Salt and chilli powder to taste
  • Ghee

Cooking Directions

  1. Remove the outer skin of the pumpkin and core it, so that a shell remains.

  2. Now steam this shell till a little tender.

  3. Grind all the masalas and onions and fry in ghee.

  4. Add khoya and chopped pumpkin core. Cook till tender.

  5. Add sliced eggs and stuff the pumpkin shell.

  6. In a pan, heat 4 tbsps. oil.

  7. Place the stuffed pumpkin, cover with a lid and cook on a low flame turning sides, for 15 to 20 minutes.
