Introducing chicken with grace. Shaan-e-Murgh, is deliciously marinated stuffed, battered and fried chicken. Which never fails to make an entrance on the dining table with murmur of appreciation.

  • Chicken breasts (with winglet bone intact) 8
  • Ghee for deep frying
  • The marinade:
  • Ginger paste 20g = 3, 1/2 tsp
  • Garlic paste 20g = 3, 1/2
  • Red Chili (crushed) to taste
  • Salt to taste
  • Lemon juice 60ml = 4 tbs
  • The filling:
  • Cottage cheese (Paneer) 300g = 11 oz
  • Green chilies 8
  • Coriander 20gm
  • Pineapple rings 2
  • Cashew nuts 40g = 1/3 cup
  • Black cumin seeds 3g = 1 tsp
  • Salt to taste
  • The batter:
  • Eggs 3
  • Corn flour 150 gm = 5 oz
  • Flour 50 gm = 6 tbs
  • Salt to taste

Cooking Directions

  1. With a knife-tip make a deep slit along the thick edge of the breast, taking care not to penetrate the opposite side.

  2. Open out the flaps thus formed and flatten with the flat side of a chopper.

  3. The marination: mix chilies, salt and lemon juice with the ginger and garlic pastes and apply this mixture on the flattened chicken breasts.

  4. Let is rest for at least 30 minutes.

  5. The filling: Mash the cottage cheese in a bowl.

  6. Finely chop green chilies, coriander, pineapple rings and roughly chop cashew nuts.

  7. Add these chopped ingredients, cumin, chilies and salt with the mashed paneer and mix well.

  8. The stuffing: Place a portion of the filling in the middle of the marinated chicken breasts and fold to make round balls, with the bone sticking out.

  9. Refrigerate for 15 minutes.

  10. The batter: Break eggs in a bowl, add corn flour, salt and water (approx 100 ml) and whisk to make a batter.

  11. The oven: Pre-heat to 275oF

  12. Heat ghee in a wok, dip the stuffed chicken breasts in the batter and deep fry over medium heat until light golden.

  13. Grease a roasting tray with a little ghee, arrange the fried chicken breasts on it and roast in a pre-heated oven for 10-12 minutes.

  14. Serve hot with sauces and dips of your choice.
