Ingredients

  • For Shami Kebab Mixture:
  • Beef/Mutton mince 250 gms
  • Chickpea lentil (chana daal) 100 gms
  • Onion 1 (small sliced)
  • Ginger garlic paste 1 tbsp
  • Cumin powder 1 tsp
  • Coriander powder 1 tsp
  • Whole spice powder 1/2 tsp
  • Turmeric powder 1 tsp
  • Red chilli flakes 1 tsp
  • Salt to taste
  • Fresh coriander 2 tbsp
  • For Parathas:
  • White wheat flour 3 cups
  • Salt 1/4 tsp
  • Water for kneading
  • Clarified butter or oil for frying

Cooking Directions

  1. In a pan add all the ingredients listed for shami kebab mixture except fresh coriander with 2 cups of water and cook for 40-50 minutes, until all the water evaporates and lentil is done.

  2. Once all the water dries, cool the mixture for 10 minutes and chop the mixture in food processor for 2 minutes only. Add fresh coriander.

  3. Sieve the wheat flour add salt then add water to the dough.

  4. Keep on kneading till the dough becomes pliable and soft.

  5. Dust the board with wheat flour.

  6. Take well kneaded dough made from wheat flour.

  7. Take two medium sized balls from the dough and roll these into a circle of about 3 or 3.5 inches.

  8. Take a portion of the kebab mixture and spread it on one of the rolled dough.

  9. Cover this dough with the second rolled dough.

  10. Press the edges of both the rolled dough firmly.

  11. Now put the rolled paratha on a hot griddle.

  12. Fry the parathas with clarified butter / oil approximately 2 minutes each side on medium flame.

  13. Serve hot with mint chutney.
