  • Tomatoes 500 gm
  • Onions 230 gm
  • Ginger 1/2" piece
  • Jaggery 12 gm
  • Chilli powder 1 tsp
  • Coriander powder 1 tsp
  • Eggs 4
  • Ghee 30 gm

Cooking Directions

  1. Blanche the tomatoes and remove the skin.

  2. Chop tomatoes, onions and ginger.

  3. Heat ghee, add onions and ginger.

  4. When slightly browned, add the chilli and coriander powder and the tomatoes.

  5. Make thick gravy, and then add jaggery and salt.

  6. Cook for 5 minutes, then spread this curry in a shallow dish.

  7. Make four slight dents and break eggs one at a time gently and pour into the four dents.

  8. Bake till eggs are fairly set.
