Nougat Souffle is a great dessert to serve at the end of meal. Its quite simple with an elegant taste.

  • Eggs 3
  • Sugar 8 tbsp
  • Gelatin 3 tbsp
  • Milk 2 cups
  • Cream 1 cup
  • Cashew nuts 4 tbsp (chopped)
  • Digestive biscuits 100g (chopped)

Cooking Directions

  1. In a nonstick pan heat 2 tbsp sugar until melt. When it gets a golden brown color add cashew nuts. Stir quickly.

  2. Remove pan from heat and pour in a greased plate and leave to set. Then break into small pieces and keep aside.

  3. Separate egg yolk and white.

  4. Add gelatin in a little milk and allow soaking.

  5. Beat egg yolks and remaining sugar until well blended.

  6. Boil the remaining milk then remove from fire. Fold yolk in milk mixture and give it a quick mix.

  7. Put on fire and cook on slow heat until thick. Add gelatin and mix well.

  8. Remove from heat and allow to cool then fold in cream.

  9. Beat egg whites until stiff and fold in thick milk mixture.

  10. Set chopped biscuits at the bottom of pudding mould. Spread half nuts crunch and pour over soufflé mixture.

  11. Keep in fridge till set.

  12. Decorate with remaining nuts crunch and serve.
