Ingredients

  • Green mangoes 2 lb
  • Red currants 1 lb
  • Fresh ginger 8 oz
  • Sugar 4 lb
  • Vinegar 3/4 pint
  • Chilli powder 3 tbsp
  • Salt 1 tbsp

Cooking Directions

  1. Peel and slice the mangoes. Peel the ginger.

  2. Grind half the amount of currants and ginger together.

  3. Slice the remaining ginger finely.

  4. Put all the ingredients except mangoes in a saucepan and stirring cook for 15 minutes.

  5. Add mangoes and simmer till mixture has a jam-like consistency and the mangoes are tender.

  6. Cool and bottle in air-tight jars.

  7. It may be eaten immediately.
