When my son ask me to bake birthday cakes, i love to do it. Especially when I have to bake for some one special in my life. This recipe for Coconut Chocolate Cake make you similar to one you would get from super stores and resturants. You can garnish it with choclate chips or choclate curl or dry fruits. Ingredients

  • All purpose flour 2 cup
  • Sugar 2 cup
  • Baking soda 1 tsp
  • Salt ½ tsp
  • Butter 1 cup (cubed)
  • Water 1 cup
  • Coconut 14 oz
  • Eggs 2
  • Butter milk ½ cup
  • Vanilla extract 1 tsp
  • Baking cocoa ¼ cup
  • For Topping:
  • Evaporated milk 1 can (12 oz, divided)
  • Butter ½ cup (cubed)
  • Marshmallows 20 (Large)
  • Sugar 1 ¼ cup (divided)
  • Semisweet chocolate chips 1 cup
  • Slivered Almonds 2 cup (toasted, divided)

Cooking Directions

  1. Put together flour, sugar, baking soda and salt in a large bowl.

  2. Combine butter, water and cocoa in a small saucepan and cook and stir until butter is melted.

  3. Then add dry ingredients to it.

  4. Whisk eggs, butter milk and vanilla extract and add them to chocolate mixture and mix it well.

  5. Pour the mixture in to baking pan (15in x 10in x 1in) and bake at 350F for 20-25 minutes or wait till a toothpick insert in center comes out clean.

  6. Put evaporated milk, marshmallows and ¾ cup sugar in large pan and cook until marshmallows are melted.

  7. Remove the pan from stove and stir in coconut.

  8. Sprinkle 1 cup of almonds on cake and spread coconut mixture on top of it and sprinkle remaining almonds.

  9. Put butter with remaining milk and sugar in a small saucepan and cook until butter is melted.

  10. Remove the pan from stove and stir in chocolate chips till they melted.

  11. Sprinkle almonds on top of it.

  12. Keep aside on a wire rack and let it cool down before serving it.
